Announcing the official recipe for the April Baking Challenge! All of the details and rules for how to participate in the challenge for a chance to win one of the PRIZES are detailed below.

Today I’m announcing the April 2021 Baking Challenge!

Last month we made Ultimate Muffins. HUNDREDS of you joined in on the fun.

It was so fun to see how creative you guys were with your flavors, mix-ins, and toppings! So many delicious muffin combos were made.

I’ll be drawing the winners for that soon, so keep an eye on your email inbox if you joined. Once winners are confirmed, they’ll be announced here on the blog and on social media, as always.

This month is all about celebrating! It’s Handle the Heat’s 12th birthday (😱) so what better recipe to make for the April Baking Challenge than…

This recipe for the Best Birthday Cake with moist and fluffy cake paired with rich and creamy milk chocolate buttercream is perfect for celebrating! Feel free to use any HTH frosting recipe you’d like.

Prefer cupcakes? This recipe will make about 18 standard cupcakes. Bake in lined cupcake pans for about 20 minutes. Check out my conversion guide for more tips for how to bake cupcakes from a cake recipe.

Step 1: Make a Best Birthday Cake.

Step 2: Take a photo of your muffins and share it before April 30th 11:59pm MST.

Click here to access the challenge landing page. This is where you can get all the latest details, enter the challenge, and see other entries.

Click the button that says “SUBMIT YOUR ENTRY” – this will pop up a little widget where you can submit your photo:

  • You can select your entry photo from Facebook, Instagram, Twitter, OR upload directly from your computer, tablet, or smart phone.

There’s also a few optional bonus entries to increase your chances of winning!


Two $100 digital gift cards! Available to anyone in the world who can shop with Amazon. I will order the cards in your currency for the USD equivalent of $100.

The winners will be selected randomly; so don’t worry about taking a perfect picture. Your photos may be put on display to share with my entire audience – that’s hundreds of thousands of people! I will email the winners. Winner must reply within 2 business days or a new winner will be chosen. Official rules are listed in the entry widget.

    Will the depth of the 8” cake pan make a difference? I see that Fat Daddio’s pans come in the following depths: 2”, 3”, 4”.

      I recommend getting the 3″ for more flexibility and just to be safe! The minimum I’d go for a layer cake specifically is 2 1/2″.

    Can I use a vanilla butter cream frosting with the birthday cake for the challenge?
