Recipe Tips for

Perfect Chemistry

Tip One: You can use old fashioned or quick cooking oats in this recipe. Quick cooking oats are smaller in size and will provide a more uniform texture, whereas old fashioned oats will provide a more craggy rough texture. Oats tend to zap moisture in any recipe, which is why simply adding them into your favorite chocolate chip recipe typically won’t work.

Tip Two: Want to bake THICK cookies? Simply flatten the cookie dough balls out a little less before baking. Be sure to use unsalted butter that’s at a cool room temperature, about 67°F. Butter that’s too warm may cause the cookies to spread and flatten while baking. Check out my How to Bake Thick Cookies article here.

Tip Three: To make these cookies ahead of time, make the dough and keep covered in the fridge for up to 2 days. Allow it to return to room temperature before scooping and baking.

Customization Ideas

Choose your own Oatmeal Chocolate Chip Cookie adventures with Flavor Variations below.

Customize your mix ins!

Instead of chocolate chips, try adding in:

• 1 1/2 cups raisins

• 1 1/2 cups butterscotch chips

• 1 cup coconut flakes

Oatmeal Creme Pie Filling

• 1 1/2 sticks (170 grams) unsalted butter, at room temperature
• 2 1/2 cups (313 grams) confectioners’ sugar, sifted
• 1 teaspoon pure vanilla extract
• 1 tablespoon milk

Beat all ingredients together with an electric mixer on medium high speed until light, fluffy, and smooth, about 5 minutes. Bake the oatmeal cookies without any mix ins. Spread the filling on half of your cookies and use the remaining cookies to sandwich.
Make ice cream sandwiches

To get really neat and pretty ice cream sandwiches, I have a little trick.

Take a scoop of ice cream and place it on a large sheet of plastic wrap. Wrap the plastic over the scoop and use your hands to shape and even it out. Use the bottom of a measuring cup to flatten until it’s the same diameter as the cookies, cupping and twisting the scoop to even the edges.

As you assemble, you’ll likely need to pop the fresh ice cream sandwiches in the freezer before they’re all assembled. Start with everything cold so you don’t have to fight against melting. But you can always return the ice cream to the freezer if it gets too warm as you assemble.

For extra perfect ice cream sandwiches, you can actually take the same cookie cutter you used to initially shape the cookie dough and use it again on the baked cookies. This will trim off any spread that occurred while baking so the edge of the ice cream and the edge of the cookies are perfectly aligned. Enjoy!
