I’m so excited to share today’s recipe because it’s absolutely perfect for celebrating the Fourth of July. Actually, this Grilled Strawberry Shortcake Skewers with Blueberry Glaze recipe would be absolutely perfect all summer long! These adorable skewers are festive and colorful (sans food coloring), and best of all made with fresh, vibrant fruit! Don’t you just love the natural beauty of fruit? Delightfully fresh, light and sweet, I guarantee this recipe won’t last long at any summer cookout, especially during your Independence Day celebrations.

This recipe was developed through a partnership with Mazola Corn Oil. I was excited when they approached me and asked if I’d like to create some fun summer recipes using super versatile and heart-healthy Mazola Corn Oil. I said yes because the oil is perfect for so many recipes since it has very little odor, a high smoke point and a mild flavor. I was quite happily surprised to learn that Mazola Corn Oil has more cholesterol-blocking plant sterols than other cooking oils – even more than olive oil – and is great source of healthy fatty acids. A new study also found corn oil can lower bad “LDL” cholesterol more than extra virgin olive oil – a great bonus to cooking with corn oil! I think this makes it especially wonderful for everyday summer cooking and baking.

For the skewers:

cake, thawed if frozen

strawberries (2 pounds), hulled

Mazola Corn Oil

honey
For the cream:

cup
whipping cream

tablespoons
granulated sugar
-
Zest of 1/2 lemon
For the glaze:
-
1 1/2
cups
powdered sugar
-
1
tablespoon
whipping cream
-
1/2
teaspoon
fresh lemon juice
-
1/4
cup
blueberries, thawed if frozen
For the skewers:

Prepare the grill for direct cooking over medium-low heat.

Slice the pound cake into slices, then cut each slice into cubes. In a small bowl combine the corn oil and honey until well combined.

Thread cake cubes and strawberries through skewers until they’re all gone. If using wooden skewers, be sure to soak the skewers in water for at least 1 hour before using. Lightly brush the oil and honey mixture all over the skewers.

Grill the skewers for about 2 minutes per side, or until the cake is toasted and golden and the strawberries are slightly softened.
For the cream:

Beat the cream, sugar and zest in a bowl with an electric mixer until soft peaks form. Cover and chill until ready to use.
For the glaze:

In the pitcher of a blender, combine all of the glaze ingredients. Blend on high until everything is well combined and smooth. Drizzle over the skewers before serving alongside the cream.
