Texture: Creamy ice cream, dense graham cracker cake, and smooth chocolate Ease: Moderate to Difficult: It takes a lot of steps, and some time, but it is not too difficult for even a novice to accomplish with a little patience. Appearance: Squares of chocolate dipped, and sprinkled with graham crackers and marshmallows. Pros: Tastes amazing. Cons: Kind of a lot of work. Would I make this again? Oh yes! But I will double the batch so I can keep some in the freezer so I can go longer between making it.

One of my absolute favorite things about summer is the treats. I mean, ice cream, s’mores, and so much more! So for today’s contribution I wanted to share a version of the best of summer all combined into one. It is an ice cream cake bite–S’mores flavored!!

First, who is as excited for summer as me? We didn’t even have a harsh winter, but for some reason I have been aching for the sunshine, and the food that comes with summer. I just love summer food. And I am a sucker for all things S’mores. In the winter I console myself with these easy to make S’mores Nachos, but when summer hits I like the real thing.

Until now…now this is my favorite way to eat that chocolate, graham cracker, marshmallow combo.

You guys, it took me like 10 tries to get this recipe right. That is not the norm for me. But I wanted it to work so bad. I had this idea in my head, and every time I thought about it, I would mentally drool. So I had to keep trying until I got it right.

But now it is perfect! Perfectly delicious! And exactly right for summer. I found this recipe for S’mores Cake from Clark’s Condensed, and adjusted it until I got the consistency and flavor I wanted. Then I played with it until I was able to achieve what I had in mind.

Basically I wanted a graham cracker cake, a S’mores ice cream center, and then dip it all in chocolate and garnish with more graham crackers and marshmallows. The first time I made this recipe, I couldn’t get the ice cream out of the trays, it wasn’t set up enough. The second time, the cake was too crumbly, and I couldn’t get it to hold shape while I dipped it. The third time I tried dumping the ice cream right over the cooked cake, and it worked well, but I ran into issues later. Basically the list goes on. But I think I worked out the kinks, so hopefully you will be able to make it, and have it work for you!

If you want to cut down a few steps you can put the ice cream mixture on the already cooked cake and freeze it all together, then cut into squares and dip. But I found I liked being able to make the cake while the ice cream was freezing to save on some time, so that is how I wrote the recipe. Both ways work.

How to make
S'mores Ice Cream Cake Bites

S'mores ice cream cake bites: Graham cracker cake and toasted marshmallow no-churn ice cream, dipped in chocolate and topped with crushed graham crackers and mini marshmallows.

Ingredients

Graham Cracker Cake

  • 3 cups graham cracker crumbs
  • 1/3 cup flour
  • 1 1/2  tablespoon baking powder
  • 1/4  teaspoon  salt
  • 3 eggs, separated
  • cups milk
  • cup  butter
  • 1 3/4  cups  sugar
  • 1 teaspoon vanilla extract

S'mores Ice Cream

Chocolate

  • cups chocolate chips
  • 2 Tbs butter

Garnish

  • Mini Marshmallows
  • Graham Crackers

Directions

Cake

  1. Preheat oven to 350 degrees.
  2. Grease a 9x13 inch cake pans, then place a piece of wax paper in, and spray with cooking spray.
  3. Using a food processor, crush graham crackers to make crumbs.
  4. In a large mixing bowl, mix graham crackers, baking powder and salt and then set aside.
  5. Put egg yolks, milk, butter, sugar and vanilla into your food processor and mix until you get an even smooth mixture.
  6. Slowly combine the cracker crumbs and wet mixture.
  7. Beat egg whites with hand mixer until stiff peaks form.
  8. Fold egg whites into cracker mixture using a spatula.
  9. Pour into pan and bake 35-40 minutes. Every oven differs, so bake until a toothpick inserted into the center comes out clean
  10. Cool for 5 minutes in the pan, then invert onto a cooling rack and cool completely
  11. Then put in freezer for 15 minutes
  12. Cut into 1-1 1/2 inch squares, and set aside

Ice Cream

  1. Make according to directions, but instead of freezing in a bread pan, pour into 1 inch square silicone ice cube mold, or into a parchment lined 9 x 13 inch cake pan, then freeze 6 hours in a deep freezer if possible. If freezing in a cake pan, you will want to invert the ice cream and cut into 1-1 1/2 inch squares once frozen.
  2. Either in mold, or separately, place ice cream squares on top of cake squares and place on parchment lined baking sheet, and return to freezer for another 20-30 minutes. The ice cream should have melted a little bit, so the two should stick together fairly well, forming a block of cake on bottom, ice cream on top.
  3. Once frozen, move on to the chocolate step

Chocolate

  1. In a microwave safe bowl, melt chocolate chips with butter by heating on half power in 30 second intervals, stirring between until smooth.
  2.  
  3. Remove cake and ice cream bites from freezer, and while still frozen, dip in chocolate.
  4. Place on a cooling rack with parchment below to catch excess chocolate
  5. Sprinkle graham cracker crumbs and marshmallows over the top
  6. Let chocolate harden, and enjoy!
