Spicy Bacon Wrapped Cheese Stuffed Chicken

Spicy Bacon Wrapped Cheese Stuffed Chicken is made spicy with a touch of Tabasco, stuffed with cheddar and cream cheese, and wrapped in crispy bacon.

Tessa's Recipe Rundown...

Taste: Spicy, smokey, sharp, and salty - positively scrumptious. Texture: The texture of this chicken is incredible. The bacon is crisp, the chicken is perfectly tender and moist, and the cheesy filling is rich and oozing. Ease: Easy yet impressive. Cutting the pocket into the chicken, stuffing, and wrapping with bacon was the most hands on part. Appearance: How could anyone not want this for dinner?? Unless you are a vegetarian. Pros: Easy yet impressive and a fantastic combination of flavors and textures. Cons: Honestly, touching raw chicken. My least favorite prep duty in the kitchen. Would I make this again? Absolutely.

Tabasco, that stuff you may love to douse on everything, recently invited me to participate in a recipe challenge surrounding 10 bloggers creating 5 recipes using only the 10 ingredients listed below, with Tabasco Original Red Sauce a must-have in every recipe. Note that salt, pepper, and oil were considered “free” ingredients.

What would you create? My 5 recipes will be over the next 3 days, so stay tuned to see what I managed to come up with! Today’s recipe uses all my favorite things and I think you are going to LOVE it. In fact, I’m pretty sure if you serve this chicken to your family they will ask you to make it every week. It’s amazing.

Spicy Bacon Wrapped Cheese Stuffed Chicken

Spicy Bacon Wrapped Cheese Stuffed Chicken is made spicy with a touch of Tabasco, stuffed with cheddar and cream cheese, and wrapped in crispy bacon.

Ingredients

  • 2 green onions, sliced
  • 1/4 cup grated sharp cheddar cheese
  • 3 ounces cream cheese, softened
  • 2 teaspoons Tabasco sauce
  • Salt and freshly ground black pepper
  • 4 (6 ounce) boneless, skinless chicken breast halves
  • 8 slices bacon
  • 1 teaspoon canola oil

Directions

  1. Preheat the oven to 350°F. In a small bowl combine the green onions, cheddar cheese, cream cheese, and Tabasco. Season to taste with salt and freshly ground black pepper.
  2. Cut a 1-inch wide slit into the thick end of each chicken breast, and carefully cut into the center to form a pocket. Be careful not to slice all the way through. Divide the cheese mixture evenly between each pocket. Wrap 2 slices of bacon around each breast.
  3. Heat the oil in a large oven-safe skillet over medium-high heat. Add the chicken to the pan, and cook for 4 minutes. Turn the chicken over and place in the oven and bake for 12 minutes, or until a thermometer inserted into the chicken registers 165°F. Let the chicken stand for 5 minutes before serving.

    Do you think I could add a couple handfuls of bagged spinach to the inside of the chicken? Would it take any longer to cook?

      I haven’t tested that myself but it should work! Cook time should remain the same.

    I made these for dinner tonight. I have never attempted to stuff a chicken and it really turned out great. My picky daughter ate all of it. Thanks for a great recipe!
