These no-bake Peanut Butter Chocolate Energy Bites are amazingly simple with just a few wholesome ingredients for a perfectly sweet on-the-go snack!
Do you guys tend to hit that afternoon slump where the only thing that sounds good is vegging out on the couch or taking a nice nap? I find it so hard to stay motivated and focused in the afternoon, it’s my least favorite working time of the day. Luckily being self-employed has its perks and I can create my own schedule based on when I work the best. Things don’t always work out that way, though, and sometimes I just need a burst of afternoon energy to get things done. I know many of you are probably the same way, which is why I think today’s recipe will become a weekly favorite in your house! These bites contain just a few simple energizing ingredients that you won’t feel guilty about indulging in, despite the fact that they taste just like peanut butter cups! Not to mention they’re a total hunger zapper. They’re loaded with a healthy mix of complex carbohydrates, fiber, protein, and omega 3 fatty acids.
Like I mention in the video, you can totally customize these bites any way you like! There are really endless possibilities. Add in shredded coconut, roll them in cocoa powder, add in nuts or dried fruit. You can also play with the ratio of wet and dry ingredients to make your bites as crumbly or as chewy/sticky as you like. Have fun with them! I find these bites store best in the fridge. If you’re planning on taking these on-the-go with you to a warmer spot, such as to a picnic or for your kid’s field trip, you’ll want to pop them into your snack bag while they’re cold so the chocolate won’t melt as the day goes on. You can even freeze these for longer storage! I like putting them in my snack bag straight from the freezer so by the time I’m ready to munch on them they’re defrosted and cool but not melted. Melted chocolate is a serious hazard of living in Phoenix!
Peanut Butter Chocolate Energy Bites
Ingredients
- 2/3 cup natural peanut butter
- 1 cup dry old-fashioned oats
- 1/2 cup ground flaxseed
- 1/2 cup chocolate chips
- 1/3 cup honey or maple syrup
- 1/2 teaspoon ground cinnamon
- 1 tablespoon chia seeds (optional)
Instructions
- In a medium bowl stir together all of the ingredients with a spatula or clean hands until thoroughly combined. Cover and refrigerate for 30 minutes, or until firmed and no longer sticky.
- Use a small spring-loaded scoop or two spoons to make balls about 1-inch in diameter. Store the balls in an airtight container at room temperature for 3 days, in the fridge for up to 2 weeks, or in the freezer for 1 month.
I would like to know how many calories is approximately in one ball? I made them yesterday!! They were delish!
These look yum – how many can I eat in one sitting?? lol (seriously though!)
I’m wondering if Steel Cut Oats would work as well as regular Oats? I’m super excited to try this recipe!
Definitely!
Can agave be used in place of the honey/syrup? Same amount?
Okay. What about those of us who can’t have peanut butter. Will cashew or almond or macadamia nut butters work equally well? I’ve wanted to try these, but hesitate to use an expensive (where we live anyway!) jar of cashew or almond butter and have a mess rather than a snack. I guess I could just put everything back in a jar and eat it with a spoon! Thanks!
Any other nut butter should work just fine! You may need to adjust the ratio of nut butter to dry ingredients as some other butters are more oily than peanut butter. Good luck!
These sound awesome! I tried to pin but it didn’t work. Don’t I just click on the Pin it icon? I used to have a recipe for granola bars like this one. The kids loved them.
Thanks! The pin-it button should be working just fine! There’s also one that appears when you hover over the images. If you’re using the pin-it button in your browser then it might be something on your computer’s side or Pinterest’s side.
I just made these, and they’re delicious! I added some quinoa and my chocolate whey protein powder, too. I think the quinoa adds really cool texture. Thanks for the idea!
Awesome! Love your creative additions.
Sounds delicious! Anything with peanut butter and chocolate can’t be bad. 🙂
I must make them, they look so tasty. And 4PM at work is the hardest part 🙁
I love the peanut butter and chocolate together!
The freezer tip is very useful especially on a hiking trip! I think the sound is a bit lower during the “instructions” portion of the video compared to the intro portion. Regardless these are still a good sweets alternative! 🙂
Thanks for the feedback! iMovie, the editing software I use, recently changed and I’m still figuring things out unfortunately. I’m glad you found the freezer tip useful – these would be perfect for hiking.
YES! The afternoon slump is the worst, and it can be so hard to be motivated when self employed. I’m like, I COULD test a recipe or I could sit around, eat chocolate and watch “The Millionaire Matchmaker.”
I can’t confirm that the Millionaire Matchmaker part will change..but I could DEFINITELY switch the chocolate for these bites! Perfect! Pinned 🙂
Yes!! Someone who understands the struggle 😉
