Living in Arizona, “Handle the Heat” isn’t just the name of my site, it’s daily life!
Table of Contents
After years of baking through triple-digit summers, I’ve learned which desserts can handle a little time in the heat… and which ones are better left at home (or served straight from the cooler).

Let’s be honest: not every dessert is meant for a beach day, BBQ, or road trip. The recipes below are some of my favorite summer-friendly treats, from Soft & Chewy Sugar Cookies to Blueberry Peach Pie and Chocolate Zucchini Bread.
They’re easy to pack, easy to share, and a lot less likely to turn into a melty mess than anything with frosting, cream fillings, or chocolate coatings.

To help you pick the right recipe for your next summer outing, I’ve ranked my favorite summer desserts using the Handle the Heat Summer Snackability Scale.

Tessa’s Summer Travel Tip
Transporting desserts on a hot day? Pop them in the freezer for 1 to 2 hours before heading out. They’ll slowly thaw as you travel and arrive perfectly chilled instead of warm and soft.

Dessert Transport Essentials
A lightweight cooler bag helps keep desserts fresher for longer and is an easy way to protect them from the summer heat without hauling a bulky cooler.
These ice packs tuck neatly under or alongside dessert containers to keep treats cool without taking up much space.
Place a Silpat mat under bakery boxes or containers in the trunk to help prevent them from sliding during transport. It’s a simple trick that can save your desserts from shifting around and getting squashed.
Perfect for transporting cookies, brownies, bars, and loaf cakes without crushing or squishing them. Bakery boxes also make it easy to stack multiple treats. Disposable makes for easier travel, too.
Great for transporting bars, brownies, cookies, and sheet cakes directly in the pan you baked them in. The lid keeps everything protected, while allowing you to safely place other items on top.
The safest way to transport Bundt cakes, pies, and other larger baked goods. Cake carriers are also great for piles of sliced brownies or bars, keeping desserts protected and mess-free.
Insulated lunch boxes are great for packing individual portions for beach days or road trips. Keeps treats cold and protected from being crushed.
Frequently Asked Questions
Not exactly, but they can get softer when it’s hot outside. Cookies with chocolate chips, chocolate chunks, or gooey fillings tend to get messier in the heat, while classics like sugar cookies and snickerdoodles hold up much better.
Your best bets are desserts without frosting, cream fillings, cheesecake layers, or chocolate coatings. Cookies, brownies (without chips), blondies, muffins, quick breads, snack cakes, and fruit pies are the easiest to transport and can hang out in the heat for a while.
Most baked goods can sit out safely for several hours. Desserts made with cream cheese, whipped cream, custard, or dairy-based fillings are the exception and should stay chilled until it’s time to serve. When in doubt, keep desserts in the shade and out of direct sunlight.
I always reach for handheld desserts like cookies, brownies, blondies, bars, muffins, and loaf cakes. They’re easy to pack, easy to serve, and nobody needs a fork or plate to enjoy them.
Keep desserts in an airtight container or bakery box and keep them out of direct sunlight. For longer drives, I like to tuck a slim ice pack underneath the container. You can also freeze many baked goods for an hour or two before leaving so they stay cooler longer.
Absolutely! Brownies are one of my favorite picnic-friendly desserts. They’ll get a little softer and fudgier as they warm up, which makes them even more delicious. Just expect a little extra mess if they’re loaded with chocolate chips or topped with frosting.
Yes! In fact, I highly recommend it. Cookies, brownies, bars, and quick breads all freeze beautifully. A short trip to the freezer before you leave helps them stay fresh longer and keeps them from getting too soft on the road.
Definitely. Fruit pies, cobblers, crisps, and bars are some of my favorite summer desserts because they taste delicious at room temperature. Just save the scoop of ice cream for serving time!
