Fall baking season is here, and even though it’s still 100°F here in Phoenix, I’m ready for all things pumpkin, apple, cinnamon, and caramel!

I put together this Fall Baking Bucket List with three recipes in each category, from easy treats and seasonal favorites to weekend baking projects and recipes made for sharing. Basically, everything you need to bake your way through fall!

A few I’d put at the top of my list? Start with Pumpkin Spice Coffee Cake for an easy fall breakfast, try the Biscoff Brownies when you’re craving something rich and chocolatey, and make Homemade Pretzels with Beer Cheese Dip when you’re getting ready for your next football party.

How many can you check off this fall? Think of this as your go-to baking list for the whole season. Pick a few recipes, try something new, and check them off as you go!

Frequently Asked Questions

How to keep baking spices fresh?

Store baking spices in airtight containers in a cool, dark, dry place away from heat and sunlight. For the best flavor, replace ground spices every 1-2 years, especially if they’ve lost their aroma.

Is canned or fresh pumpkin better for baking?

Canned pumpkin puree is the easiest and most reliable option. It has a consistent texture and moisture level, whereas homemade pumpkin puree can vary depending on the type of pumpkin and how much moisture it contains. Check out my side-by-side comparison of fresh pumpkin vs. organic and canned pumpkin purees here.

Can I use pumpkin pie filling instead of pumpkin puree?

No, these aren’t interchangeable. Pumpkin pie filling already contains sugar and spices, while pumpkin puree is only one ingredient, so substituting one for the other can throw off the flavor and texture of a recipe entirely.

What can I bake with leftover pumpkin puree?

So many options! Try adding it to Pumpkin Muffins, Pumpkin Spice Coffee Cake, or Pumpkin Bars (with Brown Sugar Frosting!) for an easy fall bake.

What are kid-friendly fall baking recipes?

Look for recipes with simple steps and fun decorating opportunities, like Halloween Cookies, Cosmic Brownies, Brown Butter Rice Crispy Treats, and Homemade Oreos. For a fun weekend baking project, try making Homemade Brown Sugar Cinnamon Pop-Tarts or Cinnamon Bun Bites!

What apples are best for fall baking?

Firm, flavorful varieties that hold their shape in the oven, like Granny Smith, Honeycrisp, Braeburn, and Pink Lady. You can also combine a tart apple with a sweeter variety for more complex flavor. Avoid Red Delicious or McIntosh when making pies, as they tend to cook down too fast, resulting in a mushy pie.

What are the best fall desserts to make ahead?

Most fall desserts can be made or prepped a day or two ahead, which is especially helpful during busy school days and crazy sports schedules! Apple Crisp, Biscoff Brownies, and Brown Butter Maple Pecan Pie can all be prepared ahead of time, making them great options for fall entertaining.

What are the easiest fall desserts for beginners?

If you’re new to baking, start with recipes that don’t require complicated equipment, techniques, or lots of decorating. Monster Cookies, Peanut Butter Pie, Pumpkin Snickerdoodles, and Oreo Brownies are all easy desserts for beginner bakers.

What are the best recipes to bring to a football party?

Choose easy-to-share (and transport!) treats that are hand-held or easy to grab. Soft Pretzel Bites dipped in Beer Cheese Dip, Chewy Brownies, and Browned Butter Toffee Chocolate Chip Cookies are all crowd-friendly options that can be made ahead of time and are easy to serve.
